Inspired by dear, old Betty Crocker, these squidgy, moreish little bites are a favourite in our house. Did you know she is a fictional character created in 1921 for branding campaigns?

450g Date paste (see note below) or dried chopped dates

250ml water

200g Soft brown sugar

170g Butter

250g Self raising flour

140g rolled oats (ideally jumbo)

Preheat oven to 200C. Line an oblong or square baking pan (approx 25cm square) with baking paper.

Prepare the date filling - chop the date paste into cubes and put in a non stick saucepan with the water over a low heat. Stir continuously until you have a thick paste. Allow to cool for 10 minutes or so.

Meanwhile, rub the butter into the flour using your fingers. Then stir in the sugar and oats; you will have a crumbly mixture.

Spoon half the crumble mixture into the pan, press firmly either with the back of a spoon or even better with your knuckles.

Spread the date mixture evenly on top, then top with remaining crumble mixture. Carefully press down with your flat hand.

Bake for 25-30 minutes until light brown. Cut into approx 3cm squares while still warm.

Allow to cool in the tin, store in an air tight container.

You can find Date paste in any middle eastern shop or order on Amazon.

Otherwise use chopped dried dates from supermarket or health food shop, you will need add another 100ml of water.
