Cranberry and Cinnamon Granola

A staple in our household - easy, healthy, homemade granola is a great way to start or even end the day with a dollop of yoghurt and perhaps some berries.

2 mugs of porridge oats, preferably jumbo
85g butter or coconut oil
2-3 Tbs runny honey
2 tsp cinnamon
150g mixed seeds (e.g. sunflower, pumpkin, sesame, linseed)
85g dried cranberries (or sultanas, or a mix of both)

 

Preheat oven to 180C

Melt the butter, honey and cinnamon together in either in a small saucepan or in a mug in the microwave.  

Put the oats in a large bowl, pour in the melted butter and honey and mix well.

Spread the mixture onto a large non-stick baking tray, ideally using a non-stick magic liner.   Bake in the oven for approx 5 mins, give a stir then bake for another 5-8 mins until the oats look light golden.   Sprinkle the seeds on top of oats and return to oven for 3 mins to lightly toast.  

Cool completely, then mix in the cranberries and store in an airtight container for about 2 weeks.
