Quick Smoked Mackerel Pate

A throw back from the 70s, this is a cheap and cheerful recipe using, of all things, cottage cheese.   Packed full of Omega 3 essential fatty acid, mackerel is a delicious, underrated smoked fish.  Ideal with a for a quick, healthy snack or impress your guests as a starter served with crackers.

3 spring onions, trimmed
Approx 150g/2 smoked mackerel fillets
300g low fat cottaged cheese
1 lemon, juice and grated zest
1 Tbs fresh grated horseradish or 2 tsp of horseradish sauce
Salt and pepper
Small bunch of flat leaf parsley

Put the spring onions in a food processor, process until finely chopped.   Add the rest of the ingredients (except the parsley) and process until a chunky paste.   Add the parsley, 'pulse' until well mixed.

Store in an airtight container for 4-5 days

Serves 4 as a starter
