Courgette Fritters

These light, vibrant, green fritters topped with a poached egg are a perfect way to start the day, or frankly delicious at any time!    

2 large Courgettes, coarsely grated
2 Tbs Flat leaf parsley (or mint), chopped
3 Spring onions, chopped including the green part
2 Eggs, lightly beaten
4 Tbs Self raising flour
Salt and pepper
2 tsp coconut oil (or vegetable oil)

Put the courgettes in a bowl, a squeeze out excess moisture using some paper towel.

Add all the other ingredients and mix well.

Heat oil in a non-stick frying pan over a high heat.   Put spoonfuls of mixture into pan, flatten slightly and cook for approx 1-2 minutes on each side.

Delicious with any kind of eggs, slices of avocado, maybe a slice of smoked salmon.

Serves 4 (8 fritters)
