Summer Courgette, Mint and Parmesan Salad

A simple, fresh summer salad.   A wonderful combination of crunchy courgettes with a citrus dressing and nutty parmesan.   Delicious on its own, or with grilled meat or fish, or even as a starter.

3 large courgettes, thinly slices (ideally in a good processor)

2 lemons, zest and juice

3Tbs olive oil

100g bag rocket

2 Tbs chopped fresh mint

2 Tbs freshly grated parmesan

 

 

Combine all the ingredients together just before serving.   Best eaten straight away.

Note - if you want to get ahead, then prepare the sliced courgettes, keep in the fridge in a bowl of cold water, covered.   Drain well before serving.
