Little Elderflower Jellies

These little jewel like glasses are a perfect way to finish any meal. The glass-like gelatin leaves are super easy to use! Just remember the jellies need about 4-6 hours to set in the fridge, so ideal for planning ahead.
2-3 Tbs elderflower cordial
Approx 300g berries
(any mix of blueberries, raspberries, red currants and black currants)
6 leaves of gelatin
Cover the gelatin leaves in a shallow bowl with cold water, soak for 4-5 mins.
Meanwhile mix the cordial with 500ml cold water, taste to check its how you like it! (Note: if you using currants you may like to add a little extra sugar, its up to you). Then pour about about a quarter of the mixture into a small saucepan. Remove the soften gelatin, squeeze out all the liquid (use your hands!) and add to the saucepan.
Bring to a simmer stirring continually to dissolve the gelatin. Cool slightly then add to the rest of the cordial mixture.
Fill up some little glasses with the fruit, pour over the cordial mixture. Put in the fridge to set (4-6 hours depending on the size of the glasses)
