Super Green Soup

Heart warming, vibrant green soup using a mix of fresh and frozen veggies.   Packed full of green  goodness.

1 onion, chopped

2 large courgettes, cut in discs

100g frozen petit pois peas

100g frozen leaf spinach

25g flat leaf parsley, roughly chopped

1 Litre Stock, either homemade or use Marigold granules

Salt and pepper

In a large non-stick pan, gently fry the onion and courgettes in a little olive oil for about 5 minutes until softened.    Add the stock and the frozen peas & spinach.   Bring to the boil then simmer for about 5 minutes.  Turn off the heat, add seasoning and parsley

Cool for about 10 mins then process ideally in a liquidizer, if not a food processor or a hand held processor.   Re-heat when you are ready to serve.

Note:   Freezes well
