Nutri-bullet Hummus

Nutri-bullets are not just for juices or smoothies, perfect for hummus!   Once you've made this - 3 minutes from start to finish - you'll never buy the shop stuff again!  Keeps well for 3-5 days in the fridge, a great, healthy snack with an oat cake or vegetable sticks, or pass around with skinny bread sticks with a glass of wine.   

 400g tin of chickpeas (or cannellini or butter beans)

1 Tbs tahini

2 Tbs plain greek yoghurt

2 Tbs olive oil

juice of a lemon

half a clove garlic (optional)

1 tsp ground cumin

Salt and pepper

Handful of fresh coriander leaves

Drain the beans from the tin - rinse well and drain thoroughly

Place all the ingredients (except the coriander leaves) in a nutri-bullet or food processor; mix until well combined, but not over smooth.   Add the coriander leaves, 'pulse' until coarsely chopped.

Store in an airtight container in the fridge for 3-5 days.
